What I established, by matching your orders against your sheets: since 12/06 the new supplier delivers a sauce base whose product sheet declares traces of nuts. The previous one did not. Three of your dishes use it.
What I have prepared: the three allergen sheets rewritten, the new line highlighted and both supplier compositions set side by side, line for line, with the date of the first delivery concerned.
Why the signature stays with the chef: an allergen sheet is a declaration by the establishment — it binds the restaurant towards the customer, and copying a supplier's composition would make the restaurant declare what the supplier asserts. The restaurant answers for it, so the restaurant signs it.
What I am missing, and only the chef knows: whether those three dishes still use that base, in what quantity, and whether there is contact with other preparations. Routing follows your organisation, and it takes account of service: allergens to the chef, and to nobody else; the deposit to the front-of-house manager; the terrace to the owner; the website price to whoever runs it. Nothing arrives between 11:30 and 14:30, or between 18:30 and 22:30 — a message during service is not read, it is lost.
With a chase: 24 h on allergens, because the dishes are served every day; 72 h on the rest. Then a weekly summary to the owner, Monday morning.
And I do not stop at the flag: whatever could be prepared is. The three allergen sheets are rewritten, the line to settle highlighted; the deposit chaser is drafted in the house's own tone, ready to send; the terrace file is complete down to the last document, with the deadline at the top; and the gaps between website and menu are listed dish by dish, eleven in all.
What is left to you comes down to three gestures, and they are signed for: an allergen sheet is a declaration by the establishment, a cancellation touches a customer who booked, a price change commits what you display. That is what means there is always somebody behind them — you approve between two services, and the gesture goes out within the minute.
And I read what you have opened to me, station by station, every access logged and withdrawable on a word: nothing leaves the house.

The risotto is one of the three dishes affected by the sauce base change of 12/06. Its allergen sheet is dated 04/03 and describes the previous composition. Answering "no" from that sheet would be accurate as to the document and false as to the plate.
What I do instead, right now:
· I pass the call to the front-of-house manager marked "allergen question — sheet out of date", so that nobody answers from memory.
· I give them the three dishes on the menu whose sheet is certain and nut-free, so there is an alternative to offer within the second.
· I log the call, with the time, in the allergen enquiries record.

What I do with that answer: I record it, with the time, the person and the dish. If the question comes back tomorrow it will not start from nothing — but it will not excuse updating the sheet either.
What remains open: the chef answered on the risotto. The other two affected dishes have not been settled.
A proposal, if you approve it: whenever a supplier changes on an ingredient, the sheet of every dish using it moves to "recheck required" — visible front of house, not only in the kitchen. While it is, the question goes to the chef instead of being answered in the dining room.
This is not a block: service continues, the dish sells. It is one more word on a screen, and it costs nothing until the day it earns its keep once.
And a weekly summary to the owner: how many allergen questions came in, how many were answered from a current sheet, how many went to the chef.

For all three I have the revenue, the food cost and the service hours booked. For the third, the agency-staff hours are not attached to the event: they sit in the month's total. The margin shown is therefore overstated by an amount nobody knows.
What the other two show: a midweek hire fills a quiet evening, and a hire on a Thursday in September displaces guests who would have come anyway. Those are not the same 45 covers.
What I do not calculate: what the two tables of 8 you would have to move are worth over a year. That depends on what you know about them, not on what the diary says.
An observation that goes beyond this enquiry: of eleven events since January, seven have no agency hours attached. I can request the attachment at the close of each event — to the front-of-house manager, chased at 72 h. Replying publicly "that person was not working that evening" names the employee a second time, turns a review few people read into an exchange everybody reads, and invites a response — the author will insist they saw somebody.
What actually deals with the problem: reporting it to the platform, on the ground that exists and holds — a review targeting an identifiable individual. The report is written, with the dated screenshot, that evening's rota and the ground ticked.
What is left to you: submitting it. A report binds the establishment and carries its name — which is exactly what gives it weight with the platform, and why it is read before it goes. Two minutes, and it is filed.
And an observation: your last three bad reviews all concern Saturday evening service, and all three evenings exceeded 90 covers. This is not a review problem, it is a threshold.
